
Cow parsley belongs to a plant family that has many toxic, even lethal species. Aerial parts of cow parsley contain 40 health-promoting compounds. In Åhlberg (2020a, 91 – 96), I name them and biochemical mechanisms of how they promote health. According to Åhlberg (2020a, 95), phytochemicals of cow parsley have the following health-promoting properties, among others: 1) antiviral, 2) anti-inflammatory, 3) anti-allergenic, 4) protect liver (hepatoprotective), and 5) chondroprotective effects on osteoarthritis.
